Jamaican Jerk Shrimp
Great by themselves, or put them in some corn tortillas for some ‘street tacos’ Jamaican Style.

- 1 lb shrimp (P&D)
- 1 TBSP Jamaican Jerk Rub
- 1 TBSP butter
- 1/2 pkg fresh mango pico de gallo (or regular)
- 1/2 cup Cookwell & Co. Watermelon Vinaigrette or Honey Lime Vinaigrette
Preheat a large saute pan for 5 minutes on medium heat. Toss together the shrimp and rub. Add butter to pan, cook shrimp for 3-5 minutes then toss in mango pico de gallo and vinaigrette. Reduce heat to low. Simmer for 3-5 minutes.
