Tomatillo & Cheese Quesadillas
Everybody’s favorite Mexican hand food!
Serves 6-8 / Prep Time: 10 mins / Cook Time: 10 mins
- 1/2 jar Cookwell & Co. Tomatillo Salsa
- 2 cups (8 ounces) shredded Colby-Jack cheese
- 8 6-inch flour tortillas
Combine the Tomatillo Salsa and cheese in a bowl, blending well. Divide the mixture between the tortillas, spreading it over the bottom half of the tortillas. Fold the top half of the tortillas over the filling.
Spray a skillet or griddle lightly with non-stick vegetable spray and toast the quesadillas, turning once, until cheese has melted. Serve hot or warm.
Add cooked chicken meat, and/or black beans to the cheese mixture for a heartier quesadilla.
