Capirotada – Mexican Bread Pudding
An easy and delicious version of class Southern bread pudding.
Serves 8-10 / Prep Time: 15 mins / Cook Time: 45 mins
- 6 eggs
- 4 cups milk
- 1 cup sugar
- 1 jar Cookwell & Co. Bananas Foster Sauce
- 1 cup (4 ounces) shredded cheddar cheese
- 1 cup golden raisins
- 1 large loaf French bread, cut into 1-inch cubes
- 1/2 cup whipping cream
- 1 cup powdered sugar
Preheat oven to 350 degrees. Spray a 9- x 13-inch baking dish with non-stick spray; set aside.
Combine eggs, milk, sugar and Bananas Foster Sauce in a large bowl; whisk until smooth and well blended. Stir in the cheese, raisins, and bread cubes. Make sure bread is totally coated with the sauce mixture.
Turn the bread mixture out into prepared baking dish and bake for 35-45 minutes in preheated oven, or until bread is golden brown.
Combine the whipping cream and powdered sugar in a bowl and whisk until smooth.
When bread pudding is done, remove from oven and poke holes all over the surface with a fork. Pour the whipping cream mixture over the pudding. Serve hot.
