Creamy Green Chile & Corn Chowder
Serves 4-6 / Prep Time: 10 mins / Cook Time: 35 mins
- 3 tablespoons extra-virgin olive oil
- 1 yellow onion, chopped
- 5 small red new potatoes, cut into 1/2-inch dice
- 1 jar Cookwell & Co. Two-Step Green Chile Stew Mix
- 2 cups frozen whole kernel corn, thawed
- 3 cups chicken broth
- 2 cups whipping cream
Heat the olive oil in a 6-quart soup pot over medium-high heat. When oil is hot, add the onion and sauté until limp and transparent, about 7 minutes. Add the potatoes and cook an additional 10 minutes.
Stir in the Texas Two-Step Green Chile Stew Mix, corn, and chicken broth. Simmer for 20 minutes, or until potatoes are fork tender.
Stir in the whipping cream, blending well. Cook to heat the cream through. Serve hot.
