Green Chile Chicken Tamale Chowder
Serves 4-6 / Prep Time: 10 mins / Cook Time: 30 mins
- 3 tablespoons olive oil
- 1 pound ground chicken
- 1 jar Cookwell & Co. Texas Two-Step Green Chile Stew Mix
- 5 small red new potatoes, cut into 1/2-inch dice
- 5 chicken tamales, cut into bite-sized pieces
- 1 12-ounce can golden hominy, drained
- 1 cup whipping cream
Heat the olive oil in a 4-quart soup pot over medium-high heat. When oil is hot, add the ground chicken and cook, stirring frequently and breaking up clumps of meat with the back of the spoon, until meat is cooked through and no traces of pink remain, about 8 minutes.
Add the Texas Two-Step Green Chile Stew Mix and the potatoes, stirring to blend well. Cook for 20 minutes, or until potatoes are tender.
Add the tamales, hominy, and whipping cream. Cook for another 5 minutes, or until ingredients are heated through. Serve hot.
