Green Chile Pork Tenderloin Stew

Ingredients
- 1 tablespoon granulated roasted garlic
- 2 teaspoons black pepper
- 2 teaspoons salt
- 1-1/2 pounds pork tenderloin, trimmed of silverskin
- 1 cup Cookwell & Co. Two-Step Green Chile Stew Mix
Directions
Combine the granulated roasted garlic, pepper and salt in a small bowl; toss with a fork to blend well. Rub the pork all over with the spice mix. Set aside at room temperature for 15 minutes. Preheat oven to 400 degrees.
Place the tenderloin in a baking dish and pour the Green Chile Stew Mix over the meat, covering well. Roast, uncovered, for 25-30 minutes, or until internal temperature registers 145 degrees.
