Green Chile Black-eyed Peas

Serves 6-8 / Prep Time: 10 mins / Cook Time: 90 mins
Ingredients
- 1/4 cup vegetable oil
- 8 ounces bulk-style Mexican chorizo
- 1 large onion, chopped
- 1 jar Cookwell & Co. Two-Step Green Chile Stew Mix
- 2 cups chicken broth
- 1-1/2 pounds fresh black-eyed peas
- Salt and black pepper to taste
- 1/2 cup minced cilantro
Directions
Heat the oil in a heavy Dutch oven over medium-high heat. When the oil is hot, add the chorizo and cook, stirring to prevent sticking, until sausage is browned, about 5 minutes. Add the onion and cook until wilted and transparent, about 7 minutes.
Carefully drain off fat from pan. Return pan to medium heat and stir in the Green Chili Stew Mix and chicken broth, blending well. Add the peas and simmer, stirring occasionally, until peas are tender, about 1-1/2 hours. Season to taste with salt and black pepper. Stir in the cilantro and serve hot.
