Southwestern Chicken Curry
India meets the Southwest in this tasty dish.
Serves 6-8 / Prep Time: 10 mins / Cook Time: 25 mins
- 1 jar Cookwell & Co. Two-Step Green Chile Stew
- 6 chicken thighs or breasts (with skin)
- 2 tablespoons chopped garlic
- 2 tablespoons chopped ginger
- 1 can coconut milk
In a large pot, brown the chicken, skin side down in some oil. Remove chicken and place on a plate. Add the garlic and the ginger and saute for about 30 seconds, add the Green Chile Stew mix, coconut milk and the chicken – stirring to incorporate. Cover and simmer on low for 60 to 90 minutes, serve over rice and garnish with lime juice and freshly chopped cilantro.
