  • 1 jar Cookwell & Company Cheese Enchilada Soup
  • 1 pound Beef Chili Meat, cooked and drained
  • 18 corn tortillas
  • 4 cups Colby jack cheese

  • Preheat oven to 350 degrees. Cook your beef in a large pan. While the meat is cooking, cut the corn tortillas into 1-inch squares and place in a large bowl. Drain the beef once fully cooked.
  •  Add the cooked beef, 2 cups of cheese, and the jar of soup. Stir until combined and place in a sprayed 9X13 baking dish. Sprinkle the remaining cheese on top and cover with foil.
  • Bake 35 minutes until cheese on top is melted and enchilada casserole is hot throughout. Take off the foil and bake for 5 more minutes, uncovered.
  • Serve with your favorite Tex-Mex toppings, like cilantro, green onions, Cholula, sour cream, salsa, or avocado.
