Corn & Cucumber Fiesta Salad

The most refreshing summer salad - introducing the light, crunchy, sweet fiesta salad! Chef's tip: using fresh corn really takes the flavor up a notch.
Ingredients
- 2 ears sweet corn-on-the-cob
- 1 medium cucumber, peeled, seeded & diced
- 1/2 cup red onion, diced
- 2/3 cup mozzarella, diced
- 6 cups spring mix salad
- 1/2 cup Cookwell Watermelon Vinaigrette
Directions
Shuck the corn, removing husks and silk. Using a sharp knife, cut the corn kernels from the cob. Combine all fiesta salad ingredients in a large bowl and toss with the Watermelon Vinaigrette.
