Grilled Romaine Salad
If you’re a fan of romaine salads, then you’ll love this version we grilled up at Cookwell – lots of taste, plus the nice, subtle hint of char from the grill and a great presentation.
Serves 4 / Prep Time: 5 mins / Cook Time: 3 mins
- 2 hearts of romaine lettuce
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
- 1/2 of a small red onion, sliced thin
- Cookwell & Co. Olive & Lemon Vinaigrette
- 1/2 cup grated Parmesan cheese
Preheat gas grill to medium-high heat. Position grilling rack five inches above the heat source. Slice the romaine hearts in half lengthwise. Trim off the root ends, leaving just enough to hold the head of lettuce together. Brush the four pieces of romaine with the olive oil and season with salt and black pepper.
Grill, cut sides down, for about 1-1/2 minutes per side. You should have some nice grill marks on the lettuce.
Place a half romaine heart on each salad plate, grilled side up, and scatter some of the red onion slices over each one. Drizzle desired portion of Olive & Lemon Vinaigrette over the salads and scatter a portion of the grated Parmesan over the top.
