Olive and Lemon Orzo Salad

The perfect side dish for a picnic or backyard cookout.

Serves 4-6 / Prep Time: 30 mins / Cook Time: 0 mins

Ingredients

  • 2 cups cooked orzo pasta, prepared according to package directions and cooled
  • 1 bottle Cookwell & Co. Olive & Lemon Vinaigrette
  • 1/2 cup chopped mushrooms
  • 1 cup small diced red onion
  • 4 ounces crumbled Feta cheese
  • 1 pint grape tomatoes, quartered
  • 2 2.5-ounce cans sliced black olives
  • 1 medium cucumber, peeled, seeded, and cut into small dice
  • 1 tablespoon Italian seasoning

 

Directions

Combine all ingredients in a bowl and stir to blend thoroughly. Cover and refrigerate until well chilled, about an hour. Serve chilled or at room temperature.
