- 1 small head fennel
- 1 10-ounce package fresh spinach, torn into bite-sized pieces
- 3 medium Pink Lady apples, peeled, cored, and sliced
- 1/2 of a small red onion, thinly sliced
- Cookwell & Co. Watermelon Vinaigrette
Cut off the tough root end of the fennel bulb. Slice the bulb into thin slices using a very sharp knife or a mandoline. Reserve some of the feathery top fronds of the fennel.
Combine spinach, apples, sliced fennel, red onions and some of the fennel fronds in a large salad bowl. Drizzle desired amount of Watermelon Vinaigrette over the salad and toss to coat well. Serve at once.
