Spinach, Apple & Fennel Salad with Red Onion and Watermelon Vinaigrette

You’ll simply fall in love with sensuously different salad. Even those who claim to not care for fennel love it!

Serves 6 / Prep Time: 15 mins / Cook Time: 0 mins


  • 1 small head fennel
  • 1 10-ounce package fresh spinach, torn into bite-sized pieces
  • 3 medium Pink Lady apples, peeled, cored, and sliced
  • 1/2 of a small red onion, thinly sliced
  • Cookwell & Co. Watermelon Vinaigrette



Cut off the tough root end of the fennel bulb. Slice the bulb into thin slices using a very sharp knife or a mandoline. Reserve some of the feathery top fronds of the fennel.

Combine spinach, apples, sliced fennel, red onions and some of the fennel fronds in a large salad bowl. Drizzle desired amount of Watermelon Vinaigrette over the salad and toss to coat well. Serve at once.
