The history of Bananas Foster is suitably rich and sweet, a classic example of what happens when abundance meets creativity. BUY HERE! In the 1950s, New Orleans was a major port of entry for bananas. Since this fruit was cheap and plentiful, the owner of the famed bastion of Creole food, Brennan's, challenged his chef create a stunning dessert using bananas. Chef Paul Blangé sautéed the creamy fruit in butter, brown sugar, and cinnamon and then ignited the sauce with dark rum and banana liqueur, reducing it until thickened. Finally, he poured the sauce over vanilla ice cream and placed the bananas alongside the scoop of ice cream. As for the now famous name, that was a tribute to a local civic leader, Richard Foster.
