Green Chile Breakfast

A tasty breakfast dish to start your day off right – and with a smile on your face.

Serves 4-6 /  Prep Time: 10 mins  / Cook Time:  30 mins


  • 1 bag frozen diced potatoes or hash browns
  • 1 pound cooked, bulk-style breakfast sausage
  • 6 eggs, scrambled
  • 1/2 jar Cookwell & Co. Two-Step Green Chile Stew Mix
  • Salt to taste
  • Pan-fried thin-cut tortilla strips
  • Shredded Cheddar cheese


Cook the potatoes according to directions on package. Stir together the potatoes with cooked sausage, scrambled eggs, and Texas Two-Step Green Chile Stew Mix in a large skillet. Cook just to heat through. Season to taste with salt.


Serve hot, topped with tortilla strips and Cheddar cheese.
