Ingredients

  • 1 cooked rotisserie chicken
  • 1 can buttermilk biscuits, uncooked
  • 1 jar Cookwell & Co. Two-Step Green Chile Stew Mix
  • 2 cups chicken broth
  • 1 cup heavy whipping cream
  • Salt & black pepper to taste
  • Optional: peas and diced carrots, if desired (frozen or fresh)

Directions


  • Pull the meat and skin from the chicken; discard skin and bones. Set chicken aside.
  • Remove the biscuits from can and cut them into bite-sized pieces; set aside.
  • Combine the chicken and all remaining ingredients, except biscuits, in a 4-quart pot over medium-high heat. Season to taste with salt and black pepper. Cook, stirring often, until the mixture begins to boil.
  • Add in the carrots and peas, if using.
  • Drop the biscuit pieces into the boiling liquid. Cook, stirring every two minutes, for about 8 minutes. Reduce heat to a bare simmer and cook gently for an additional 5 minutes, stirring occasionally. Once the dumplings are done, you're ready to go!
  • Serve hot in shallow soup plates.
