White Bean & Turkey Chile

Ground turkey makes it healthy, white beans make it tasty, and Cookwell & Co. Texas Two-Step Green Chile Stew Mix takes this quick and simple chile simply over the top in flavor!

Serves 8 / Prep Time: 10 mins / Cook Time: 30 mins

Ingredients

  • 3 tablespoons olive oil
  • 1-1/2 pounds ground turkey
  • 1 medium yellow onion, diced
  • 1 jar Cookwell & Co. Two-Step Green Chile Stew Mix
  • 2 16-ounce cans Great Northern beans, drained and rinsed
  • Garnishes: corn tortilla chips and shredded cheese of your choice

 

Directions

Heat the olive oil in a Dutch oven over medium-high heat. When the oil is hot, add the turkey and cook, stirring frequently, and breaking up the clumps of meat with the back of the spoon, until meat is cooked through and no traces of pink remain, about 8 minutes. Add the onion and cook until it is wilted and transparent, about 5 minutes. Stir in the Texas Two-Step Green Chile Stew Mix and the beans, blending well.

 

Reduce heat to a simmer and cook, uncovered, for about 20 minutes, stirring frequently.

Serve hot, garnished with tortilla chips and cheese.

Note: The chile can be prepared the day before serving. It actually tastes better the second day! Cool completely, then cover and refrigerate. Reheat when ready to serve.
