Chicken Cordon White

This recipe for Chicken Cordon White is our take on the famous French dish, Chicken Cordon Bleu. Using our Honey Lime Vinaigrette, we simplify the process while stull infusing the chicken with a great depth of flavor. It's really a hands-off recipe once the chicken is stuffed with the ham and cheese - it cooks in the oven for about 30 minutes, simmering in the savory-sweet drippins. We swap out the traditional breadcrumbs for all-purpose seasoning to give the chicken the same crunchy texture, but with a peppery kick. However, a mixture of the two would not be a bad idea! Ingredients

  • 2 pounds boneless, skinless chicken breasts 
  • Aged white cheddar
  • 4-8 slices of shaved ham
  • 1/2 cup Cookwell & Company Honey Lime Vinaigrette
  • 4 tablespoons all-purpose seasoning

Directions

  • Preheat the oven to 375 degrees.

  • Cut a slit into each chicken breast and stuff it with a slice of ham, 1/2 slice of cheese, and a drizzle of dressing.

  • Place the chicken in an oven-proof pan and cover with remaining dressing. Sprinkle with the all-purpose rub. Place in the oven and cook for 30 minutes, until a meat thermometer reads at least 165.

  • Divide the breasts of chicken cordon white onto plates and drizzle with honey-lime chicken juice from the pan. Pairs great with a light leafy salad or some roasted potatoes.
