Ingredients
- 1 lb. elbow pasta
- 1/2 jar of Cookwell 2 Step Chili
- 2 lbs ground beef
- 1 1/2 cups shredded Cheddar Cheese or Monterey Jack
- Optional: parsley, green onions, or fresh jalapenos for garnish
Directions
- Preheat the oven to 350.
- Cook the pasta according to package instructions. Drain and set aside.
- While the pasta cooks, make the chili: place a large pot or dutch oven over medium heat. Add the ground beef and brown until fully cooked. Add the half jar of chili and let simmer until hot, about 5 minutes.
- Once the chili is ready, pour in the drained pasta. Add about half of the cheese, and stir until mixed well.
- Add the remaining cheese in an even layer over the top of the chili mac, and place in the oven, uncovered. You just want to get the cheese melty, so once you see it start to bubble and brown, it's good to go.
- Take out of oven and let sit for a few minutes. Serve in bowls with any garnishes you like - more cheese, green onion, parsley, some fresh jalapenos, or a dollop of sour cream. Or all of the above!
