Beef and Cheese Enchilada Casserole

This enchilada casserole is designed for when you want the comfort of a casserole dinner without the hassle - a delicious and simple dish to prepare. Layers of ground beef, corn tortilla, and cheese are melded together with our Cheese Enchilada Soup to make a fantastically easy dinner for the whole family to enjoy - that’s really what we’re all about, after all! Top with whatever you like most on your enchiladas - avocado, sour cream, salsa, cilantro - just to name a few!
Ingredients
- 1 jar Cookwell & Company Cheese Enchilada Soup
- 1 pound Beef Chili Meat, cooked and drained
- 18 corn tortillas
- 4 cups Colby jack cheese
Directions
- Preheat oven to 350 degrees. Cook your beef in a large pan. While the meat is cooking, cut the corn tortillas into 1-inch squares and place in a large bowl. Drain the beef once fully cooked.
- Add the cooked beef, 2 cups of cheese, and the jar of soup. Stir until combined and place in a sprayed 9X13 baking dish. Sprinkle the remaining cheese on top and cover with foil.
- Bake 35 minutes until cheese on top is melted and enchilada casserole is hot throughout. Take off the foil and bake for 5 more minutes, uncovered.
- Serve with your favorite Tex-Mex toppings, like cilantro, green onions, Cholula, sour cream, salsa, or avocado.
