This beef picadillo brings Tex-Mex comfort with a twist! This Beef Picadillo recipe uses Cookwell & Company’s Tortilla Soup as a flavor-packed base, bringing smoky tomatoes, peppers, and spices into every savory bite. With ground beef, tender potatoes, and the vibrant kick of the soup, this dish becomes rich, hearty, and incredibly easy to make. Perfect for stuffing into tacos, serving over rice, or pairing with warm tortillas, this picadillo is a weeknight win with all the comforting flavors of a slow-simmered favorite.

Ingredients


  • 1 jar Cookwell & Company Tortilla Soup
  • 1 lb. ground beef
  • 2 medium potatoes, peeled & cubed
  • 1 cup beef broth
  • Flour tortillas or over rice

Directions


  • In a large pot or Dutch oven, brown the beef in olive oil over medium heat until cooked through, about 5-8 minutes. 
  • Drain fat from the beef, then add back into the pan.
  • Add the Tortilla Soup, beef broth, and potatoes and cook on low, covered, until the potatoes are tender, about 20 minutes.
  • Check the seasoning and add salt/pepper if needed. 
  • Serve hot on flour tortillas, or with cilantro lime rice and beans. Make sure to top with your favorite taco toppings, like cilantro, avocado, jalapenos, or sour cream.
