Calico Beans

Feel free to play around with the types of beans you use in this recipe - we opt for a mix of black, kidney, and pinto, but any of your favorites will work. You can also add some browned beef for additional protein - calico beans invite experimentation.
Ingredients
- 2 tsp. olive oil
- 1/2 yellow onion, diced
- 6-8 slices cooked bacon, chopped
- 1 can black beans
- 1 can kidney beans
- 1 can pinto beans
- 1/2 cup Better Than Good Moppin’ Sauce
- 1/2 cup chicken broth
- 1 tablespoon all-purpose rub
Directions
To make Calico Beans:
- Warm a 4-quart pot over medium-high heat. Add oil and onions to pan; brown 4-5 minutes.
- Add bacon and cook for a few more minutes, until fully cooked through and starting to crisp.
- Add remaining ingredients - the beans (undrained), Moppin' Sauce, chicken broth, and the all-purpose rub and bring to a simmer. Reduce heat and let simmer for about 5 minutes, until it's hot throughout and the flavors of the calico beans have melded.
