By using our Carne Guisada Starter, you can enjoy the deep, rich taste of slow-cooked stew in a fraction of the time—with a delicious twist. Instead of spending hours braising meat, this recipe uses juicy chicken breasts baked in a savory sauce that’s packed with the signature spices, peppers, and tomatoes of authentic carne guisada. You could also opt for chicken thighs if that's more your jam. It’s perfect for a busy weeknight when you want to bring the flavors of the border to your dinner table with minimal effort. And adding the frozen vegetables is an easy way to make sure you're getting your veggies! Ingredients


  • 1 Jar Cookwell & Company Carne Guisada Starter
  • 4 boneless, skinless chicken breasts, or 6-8 boneless, skinless chicken thighs
  • 1 package frozen mixed vegetables
  • 16oz shredded Oaxaca cheese
  • 3 Tbsp. olive oil
  • Optional toppings: Cilantro, jalapeno, avocado, etc.

Directions



  • Preheat oven to 375 degrees.
  • Season the chicken breasts on both sides and sauté in a non-stick skillet with olive oil over medium-high heat until both sides are browned.
  • Remove chicken from skillet and place in an oven-safe baking dish.
  • Turn heat to medium-low and add in the frozen vegetables.
  • Cook just enough to soften them, about 5-8 minutes.
  • Pour the Carne Guisada Starter into the pan and stir to incorporate with the vegetables.
  • Pour the veggie/carne guisada mixture over the chicken in the baking dish.
  • Cover with foil and bake for 25-30 minutes.
  • Remove from the oven, remove foil, and sprinkle shredded Oaxaca cheese over the top and bake uncovered for another 3-5 minutes, until cheese is melted and bubbly but not browned.
  • Garnish with cilantro, diced jalapenos, or whatever other toppings you enjoy.
