Garlic & Molasses Potato Salad

Y'all - this Garlic Molasses Potato Salad is darn good! Unique as it is flavorful, it comes together quickly. The marinade infuses the potatoes with sweet garlicky notes, and the bacon bits crumbled on top make for some nice smoky bites and crunchy texture. It's colorful and light and we promise it'll make a great presentation at your next cookout!
Ingredients
- 3 pounds red potatoes, peeled & quartered
- 1/2 cup each red & green bell peppers, diced
- 1/2 cup celery, diced
- 1/2 cup red onion, finely diced
- 8 bacon slices, cooked & crumbled
- 3/4 cup Cookwell & Co. Garlic & Molasses Marinade
- 1/4 cup mayonaise
Directions
- Place the potatoes in a 4-quart pan and add cold water to cover. Bring to a boil and simmer for about 15 minutes, or until potatoes are tender, but not mushy. Drain well and refrigerate to cool.
- When potatoes are cool, toss with remaining salad ingredients. Make the dressing by whisking the Garlic & Molasses Marinade and the mayo together, blending well. Fold the dressing into the salad, making sure to coat all ingredients.
- Refrigerate your garlic molasses potato salad, covered, until ready to dish out!
