Gumbo Baked Chicken Thighs

Ingredients


  • 1 jar Bayou Brothers Gumbo Starter
  • 1 bag frozen peas
  • 2 small potatoes, peeled and diced
  • 6 bone-in, skin-on chicken thighs
  • 1/2 cup shredded Colby Jack cheese

Directions


  • Preheat the oven to 350F.
  • Blend the Bayou Brothers Gumbo starter in a blender until smooth.
  • Pat chicken thighs dry with a paper towel to encourage good browning. Season with salt and pepper.
  • Heat a large skillet over medium-high heat. Add about 2 Tbsp. olive oil.
  • Brown chicken thighs skin side down in the skillet until well browned, about 8 minutes.
  • Flip chicken and let cook for an additional 3-4 minutes.
  • When chicken is browned, remove to an oven-safe baking dish. Pour in the gumbo starter, peas, and potato to cover the chicken. Mix to combine. 
  • Cover with foil and bake for about 45 minutes.
  • Remove the foil and sprinkle the cheese on top. Bake another 5 minutes or until the cheese is bubbly.
  • Serve hot with a dinner salad!
