Ingredients
- 1 jar Bayou Brothers Gumbo Starter
- 1 bag frozen peas
- 2 small potatoes, peeled and diced
- 6 bone-in, skin-on chicken thighs
- 1/2 cup shredded Colby Jack cheese
Directions
- Preheat the oven to 350F.
- Blend the Bayou Brothers Gumbo starter in a blender until smooth.
- Pat chicken thighs dry with a paper towel to encourage good browning. Season with salt and pepper.
- Heat a large skillet over medium-high heat. Add about 2 Tbsp. olive oil.
- Brown chicken thighs skin side down in the skillet until well browned, about 8 minutes.
- Flip chicken and let cook for an additional 3-4 minutes.
- When chicken is browned, remove to an oven-safe baking dish. Pour in the gumbo starter, peas, and potato to cover the chicken. Mix to combine.
- Cover with foil and bake for about 45 minutes.
- Remove the foil and sprinkle the cheese on top. Bake another 5 minutes or until the cheese is bubbly.
- Serve hot with a dinner salad!
