Ingredients
- 1 jar Cookwell & Company Hatch Verde Soup Starter
- 1-2 cups chicken or vegetable broth (depending on desired consistency)
- 2 (15 oz) cans white beans (such as cannellini or great northern), drained and rinsed
- 4 cups chopped kale, stems removed
- 1/2 cup fresh cilantro, chopped (optional, for garnish)
- 1 lime, cut into wedges
- Salt and pepper, to taste
Directions
- Heat an large pot or Dutch oven over medium heat. Pour in Cookwell & Company Hatch Verde Soup Starter into. If you prefer a thinner soup, add up to 2 cups of chicken or vegetable broth. Stir to combine.
- Add the drained and rinsed white beans to the pot. Bring the soup to a simmer over medium heat, allowing the flavors to meld for about 10 minutes.
- Stir in the chopped kale and simmer for an additional 5–7 minutes, until the kale is tender but still bright green. Season the soup with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for a zesty kick.
