King Ranch Casserole

While nobody is quite sure where this recipe came from, pretty much every Texan has heard of King Ranch Casserole. Named after the famous King Ranch in south Texas, the casserole is layered with cooked chicken, corn tortillas, cheese, and, typically, canned cream of mushroom and cream of chicken soups along with Rotel. Likely inspired by Mexican chilaquiles just across the border, this dish has made its way into the hearts of Texans in it's 70-some year history. At Cookwell, we made this Texas Ranch Casserole mix to replace those canned ingredients in favor of a homemade sauce with fresh ingredients. This King Ranch Casserole mix has everything it should - diced & roasted tomatoes, onion, cream, hatch chili, mushrooms, and spices - and nothing it shouldn't. It makes for a hearty and delicious dish, and you're sure to taste the Cookwell difference.

Ingredients

  • 1 jar Cookwell Texas King Ranch Casserole
  • 10-12 corn tortillas 
  • 2-3 cups shredded or chopped chicken 
  • 2 cups shredded cheese
  • Optional: Green onions, sour cream, cilantro, avocado for garnish 

Directions

  • Grease a baking pan and preheat the oven to 325 degrees.
  • Quarter a stack of 10-12 corn tortillas
  • In a large bowl, mix the shredded chicken and the jar of Cookwell Texas King Ranch Casserole Mix until combined.
  • Arrange the quartered tortillas on the bottom of the baking pan in a thin layer.
  • Spoon in 1/3 of the chicken mixture, then cover with another layer of tortillas. Repeat until you have 3 layers.
  • Top with a generous layer of cheese.
  • Put in the oven and bake for 40 - 45 minutes, until the casserole is bubbling and the cheese is starting to get crisp.
  • Serve the king ranch casserole with your preferred garnishes and toppings.
