Whether you're feeding a hungry crowd or just craving something hearty and satisfying, this recipe brings the spirit of West Texas straight to your table—without ever lighting the grill.

Ingredients


  • ½ jar Pecos 83 Marinade
  • 4 cups chicken broth or water + bouillon
  • 2 cups rice (par-boiled)
  • 1lb smoked sausage or andouille (chopped)
  • Salt and pepper to taste
  • Optional: green onions, hot sauce

Directions


  • Cook rice according to directions on bag, substituting water for chicken broth, cool and set aside
  • Add sausage and oil to a hot skillet, sauté over medium heat for approximately 5 minutes until nice and brown. (If adding veggies, add now)
  • Add Pecos 83 to pan and heat for 1 minute, then add chilled rice and continue heating through, mixing constantly. 
  • Season with salt and pepper.
  • Garnish with sliced green onions and a few shakes of hot sauce.
  • Optional add ins: bell pepper, celery, onions, and garlic
