Ingredients


  • 2 bunches of fresh kale, stems removed, and leaves chopped
  • 4 slices thick-cut bacon, diced
  • 1/2 jar Cookwell & Company Bayou Brothers Gumbo
  • 1 cup chicken or vegetable stock
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Hot sauce (optional)

Directions


  1. Cook the Bacon: In a large, deep skillet or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.
  2. Sauté Aromatics: Add the onion to the skillet and cook in the bacon fat until softened, about 3–4 minutes. Add the garlic and crushed red pepper flakes (if using) and cook for another 30 seconds until fragrant.
  3. Add the Kale: Gradually add the kale to the skillet, stirring to coat it in the bacon fat and seasonings. Cook until slightly wilted, about 3 minutes.
  4. Combine with Gumbo Base: Pour in the Cookwell & Company Bayou Brothers Gumbo and the chicken or vegetable stock. Stir to combine.
  5. Simmer the Greens: Reduce the heat to low, cover, and let the greens simmer for 20–25 minutes, stirring occasionally, until tender and infused with flavor. Add a little more stock if the liquid reduces too much.
  6. Season and Serve: Taste and adjust seasoning with salt and pepper. Stir in the reserved bacon just before serving or use it as a garnish on top.
