Tortilla Taco Soup

This recipe is a spin on the classic tortilla soup - meet Tortilla Taco Soup! A jar of Cookwell Tortilla soup serves as our base, but instead of shredded chicken, we opt for some ground beef. The result is a flavor-infused broth that invites experimentation - whatever you like in your tacos you’ll like in this taco soup! It’s a great option for a quick weeknight dinner when you want something filling, but also want to include some fresh ingredients. It’s also perfect for when you’re getting sick of the same old taco night… if getting sick of tacos is even possible!

Ingredients

  • 1 lb. ground beef
  • 1 medium red onion, diced
  • Salt, pepper
  • 1 jalapeño, diced
  • Cookwell Tortilla Soup
  • 1 can black beans
  • 1 can of corn
  • 1 can Rotel
  • Toppings of your choice: cilantro, shredded cheese, avocado, tortilla chips, etc.!

Directions

  • Add the ground beef to a Dutch oven or other heavy-bottomed large pot over medium-high heat. Stir and break up until cooked through. Season with salt and pepper and add the diced red onion and jalapeño, if using.
  • Add in the jar of Cookwell Tortilla soup, along with the black beans, corn, and Rotel. Bring to a simmer.
  • Divide the taco soup among bowls and serve with your desired toppings. We recommend some cilantro, a sprinkle of cheese, sliced avocado, and a couple crunchy tortilla chips.
