Trevor’s Texican Pozole

Pozole is a traditional Mexican soup that truly embodies the soul food of the country. While pozole typically features a broth that simmers with chiles for hours, and uses pork shoulder or butt roast, all of this is quite time-intensive for a weeknight dinner. This recipe is a Tex-Mex version with a time-saving shortcut of using our tortilla soup as a base. This still gives the soup rich flavor without hours spent over the stove. The best part of pozole is arguably the toppings options - cabbage, white onions, cilantro, radish slices, tortilla strips, or a dollop of sour cream. Get ready for a Two-Step Tex-Mex delight!
Ingredients
- 1 30 oz. can of golden hominy
- 1 lb. ground turkey
- 1 jar Cookwell & Company Tortilla Soup
- 2 Tbsp. ancho chile powder
- 1 cup chopped cilantro
- Toppings of choice: sliced radish, lime, avocado, sliced jalapenos, shredded lettuce, etc.!
Directions
- In a big pot, brown turkey together with ancho chile powder. Add hominy, undrained, and stir well. Add Tortilla Soup and the cilantro. Bring pozole to a simmer.
- Have fun with side fixins and toppings - serve with tortillas, fresh lettuce, avocado, jalapenos if you like some kick, and a dollop of sour cream!
